Even though there are about 250 different species of the cinnamon plant scattered around the world, there are two main types:
“True” Ceylon cinnamon (Cinnamomum zeylanicum) is native to Sri Lanka and southern India.
The more common variety, Cassia cinnamon (Cinnamomum aromaticum), is known as “Chinese” cinnamon.
