Chia Parfait with Berries and Granola

- 1/4 cup chia seeds extra virgin
- 1 cup almond milk (or your preferred milk)
- 1 tbsp honey or maple syrup (adjust to taste)
- 1/2 tsp vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/2 cup granola
Prepare the Chia Pudding
In a mixing bowl, combine the chia seeds, almond milk, honey (or maple syrup), and vanilla extract.
Stir well to ensure the chia seeds are evenly distributed. Taste and adjust sweetness if needed.
Cover the bowl and refrigerate for at least 2 hours, or overnight. During this time, the chia seeds will absorb the liquid and create a pudding-like consistency.
Assemble the Parfait
Once the chia pudding is ready, take two serving glasses or bowls.
Begin by spooning a layer of chia pudding into the bottom of each glass.
Add a layer of mixed berries on top of the chia pudding.
Sprinkle a layer of granola over the berries.
Repeat these layers until the glass is filled, finishing with a generous spoonful of berries and a sprinkle of granola on top.
